Plotting phase diagram in system of first order difference equation.

Let's suppose we have we have two system of difference equations. I need to ask one thing. When we plot phase diagrams in difference equations, do we assume particular solution and then plot it in y and x space.
And if both the curves are facing in same direction, how do we know which curve is unstable, in case of identifying saddle path?
